TOKWA AT HIPON SA TAUSI/ TOFU AND SHRIMP WITH BLACK BEANS
Prep time: 30 minutes
Cooking time: 10 minutes
Yields: 4 servings with steamed rice
4 tbsp cooking oil
1 medium size onion, peeled and chopped
3 cloves garlic, minced
1 package (12 oz) fried tofu, diced medium
1/2 can fermented Chinese black beans, rinsed well with cold water
2 lbs medium size shrimp, peeled and deveined
1 cup broth
Slurry – 1 tbsp cornstarch with 1/2 cup water dissolved
greens – kinchay or chinese celery, sili or jalapeno and green onions
Pre heat oil for a minute.
Add and cook onions for 2 minutes
Add garlic and saute for 30 seconds.
Add tofu and cook for a minute.
Add black beans, add shrimp, broth
Season with ground pepper.
Bring to a boil.
Cook for 2 minutes.
Add slurry, stir and cook for a minute or until sauce has thickened.
Cover and cook for 2 minutes over low heat.
Serve with steamed rice.
