CHINESE BROCCOLI AT SOTANGHON
Prep time: 20 minutes
Cooking time: 20 minutes
Serves: 4 ( if you add two more bundles of sotanghon)
4 tbsp cooking oil
200 grams pork cut into small pieces
1 1/2 tbsp cornstarch
salt and pepper
200 grams carrots,peeled and cut into large pieces
1/2 medium size onion, peeled and chopped
5 cloves garlic,chopped
300 grams of chinese broccoli,chopped into large pieces with the stem included. – washed and drained.
3 tbsp soy sauce
1/4 cup oyster sauce
2 tbsp fish sauce
1 cup water
1/2 cup water to be added to the left over cornstarch to dissolve for thickening.
2 bundles of vermicelli or glass noodles (soaked in warm water to soften), drained
Combine pork with cornstarch and salt and pepper
Fry for 2 minutes
then add carrots and cook for another 3 minutes
or until pork is tender and brown.
Set aside.
In a large wok, pre heat cooking oil and saute onions for 2 minutes.
Add garlic and cook for 30 seconds.
add broccoli and cook for a minute.
Add soy,oyster sauce, fish sauce and ground pepper.
Add 1 cup of water
Bring to a boil
Add sotanghon.
Continue to boil for a minute while stirring.
Add back pork and carrots.
Combine well.
Serve right away.
