HIPON SA TAUSI AND MAYO – CREAMY SHRIMP IN BLACKBEANS AND MAYONNAISE
Prep time: 20 minutes
Serves: 4 adults
2 lbs large shrimp, bearded, deveined, shell on
1 large onion, peeled and chopped
6 cloves garlic, minced
1/2 cup ginger, peeled and sliced thinly
1 large eggplant, cut into bias
1 can fermented black beans, brine removed
2 1/2 tbsp Mayonnaise
4 pcs Serrano peppers – cut thinly
1 cup chopped green onions
12 chopped cilantro
Saute onions for a minute with 3 tbsp cooking oil
Add garlic and ginger for a minute.
Add eggplant and cook for 2 to 3 minutes until soft.
Add fermented black beans while cooking the eggplant.
Add Shrimp and keep mixing.
Cover and cook for 3 minutes.
Uncover and add mayonnaise
Add green onions, serrano peppers and cilantro.
Turn heat to low and cook for 2 minutes.
Serve right away.
