PANCIT LOMI
Note: This alternative dish is for those who do not have easy access to MIKI NOODLES
1/2 lb ground pork
5 cloves gloves
1 medium size onion, peeled and diced
1 cup extra firm tofu, water drained and diced
2 cups chicken stock
3 to 4 tbsp soy sauce
cooked spaghetti
Slurry – dissolve 1 tbsp cornstarch and 1/2 cup stock.
1 cup green cabbage, shredded
1 cup snow peas cut into matchsticks
2 eggs beaten
8 pcs pre cooked shrimp
lemon juice
Chicharon
Brown pork with garlic
Add onions and cook for a minute
Add tofu and cook for a minute
add carrots and cook for a minute
Cook for 2 minutes.
Remove from pan. Leave pork fat in the pan.
Add liquid, cover and bring to a boil.
Add noodles. See cooking video for instruction how to make the noodles plumped.
Add cabbage and snow peas
Add egg, stir well..
whisk in slurry.
Season with salt and pepper.
Add pre cooked shrimp.
Add back pork.
Stir and cover.
Turn off heat.
When serving add chicharon and squeeze lemon juice.
