LANGKA OKOY/GREENJACKFRUITFRITTERS
Prep time: 20 minutes
Cooking time 4 minutes per fritters
Yields: 12 fritters
1 can green jackfruit in brine, drained and cut into thin strips
3/4 can ice cold beer
1 cup all purpose flour
1/4 cup cornstarch
1 tbsp baking powder
8 oz bean sprouts
1/2 lb medium size shrimp
1/2 tsp salt
1/2 tsp ground pepper
1 tsp onion powder
1 tsp garlic powder
1/2 cup chopped green onions
cooking oil for frying
In a large mixing bowl
Pour beer.
Combine with flour, cornstarch,salt and pepper
Ad baking powder, onion and garlic powder
Whisk until smooth batter
Add jackfruit, sprouts,shrimp and green onions.
Pre heat enough cooking oil in a pan or wok (350F)
Slide in portions of the fritters
Cook between 4 to 5 minutes – do not burn.
Remove and place in a colander to remove excess oil
Repeat process until all okoy is fried.
