Hello to all of you. Ampalaya or Bittermelon is one of my all time favorite vegetables so I cook them a lot. Many of you knows how to make it. It’s my dinner tonight and decided might as well record it and share it with you again – this time using low heat to preserve the nutrients.
Pre heat 3 tbsp olive oil for a minute.
Add 1 large onion (peeled and diced) and 2 large tomatoes (chopped), cover, adjust heat to medium and cook for 5 minutes.
Uncover and add 5 cloves garlic, minced.
Add1/2 cup water
Add 1 large bittermelon or ampalaya (seeded and thinly sliced)
Add 1/2 container (8 oz) extra firm tofu, small diced.
Season with salt and pepper or maybe patis if you prefer.
Cover, adjust heat to low and cook for 5 minutes.
Uncover.
Stir a little and add 3 beaten eggs.Combine well.
Cover and turn of heat and allow the carryover cooking cook the eggs for 2 to 3 minutes.
Serve.
