THAI INSPIRED NOODLES AND PRAWNS
1 box Thai Noodles, cooked according to package instructions (3 minutes)
1 knob ginger, peeled and thinly sliced (matchstick sizes)
5 cloves garlic, minced
2 pcs Chinese sausage, casing removed and diced small
1/2 can fermented soy beans (rinsed from its salty brine, cold water)
1 1/2 lbs praws, peeled but tails and heads intact. deveined.
2 cups chopped brocolli florets
2 tbsp mayonnaise
2 eggs beaten
salt and pepper to taste.
pre heat 2 tbsp oil for a minute.
Add ginger and cook for a minute.
Add garlic and cook for 30 seconds.
Add sausage and cook for 2 minutes until brown and oil comes out of the sausages.
Add black beans and cook for a minute.
Add prawns and brocolli.
Adjust heat to medium, stir and cook for 2 minutes until praws are cooked.
Add mayonnaise and stir.
add ground pepper.
Stir and cook.
Create a space at the center and add cooked noodles.
Stir for a minute.
Add beaten eggs.
