STIR FRIED NOODLES WITH PORK CHOPS, CILANTRO JALAPENO
Prep time: 30 minutes
Cooking time: 15 minutes
Yields: 2 – 4 if more noodles are added
2 lbs. thinly sliced pork chops
2 tsp garlic powder
½ tsp Cayenne Pepper
½ tsp salt
¼ cup cornstarch
8 tbsp cooking oil
1 medium size yellow onion, peeled and chopped
2 large jalapenons, partially seeded
8 oz cooked miki noodles
1 to 3 tbsp soy sauce
1 t 2 cups chopped cilantro
½ cup chicken broth
Combine ingredients from pork chops to cornstarch in a bowl.
Meanwhile, pre heat 4 tbsp oil in a pan.
Fry pork chops (in batches) until golden brown. Set aside.
Cut pork chops into bite size pieces, set aside.
Pre heat the remaining 4 tbsp oil.
Saute onions for 1 minute.
Add jalapenos and cook for 30 seconds.
Add cooked noodles. Keep stirring for 2 minutes.
Add soy sauce and stir.
Add chicken broth, stir and cook for 30 seconds.
Add cilantro.
Turn off heat. Serve.
