PAD THAI INSPIRED BEEF WITH BROCCOLI AND EGG NOODLES
Prep time: 20 minutes
Cooking time: 15 minutes or less
Yields: serves 4
4 tbsp cooking oil
1/2 lb cubed beef chuck
salt and pepper
3/4 to 1 cup beef broth
3 tbsp soy sauce
2 tbsp tomato ketuchup (you can add more if you want it to be slightly on a sour taste)
1 tbsp peanut butter
1/2 to 1 tbsp sugar
1 lb broccoli (florets only)
1 large onion cut into half rings
3 eggs, beaten
Pre heat oil for a minute.
Season beef with salt and pepper.
Add beef and cook for 3 minutes until brown.
Add stock, soy, ketchup, peanut butter and sugar.
Cook for 3 minutes until liquid has reduced and became thick.
make sure beef is tender.
Add vegetables and keep stirring for 30 seconds.
Cover and cook for a minute.
uncover and add beaten eggs.
Lower the heat to medium and keep stirring for a minute to cook the eggs.
Add noodles (if using). Keep combining
