STIR FRIED PORK WITH TOFU AND EGGS

Cooking time: 20 minutes
Yields: Serves 4
cooking oil
1 package extra firm tofu – water removed and diced small
3 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp chili garlic paste
1 tbsp sugar
1/2 tsp ground pepper
4 tbsp water
4 eggs beaten and seasoned with salt
1/2 lb ground pork
5 cloves garlic, minced
1 package (8 oz) mushrooms
Slurry – 1 tbsp cornstarch with 1/2 cup water
Combine and whisk the sauce ingredients (From soy sauce to water) and set aside.
Make the slurry (thickener) and set aside.
Pre heat 4 tbsp cooking oil and cook tofu.
Fry tofu for 10 minutes until brown.
Remove from the wok and set aside.
Fry eggs using 3 tbsp cooking oil.
Set aside.
Pre heat 2 tsp oil and fry pork
Season with ground pepper and salt.
Brown pork (5 minutes)
Add garlic and cook for 30 seconds.
Add mushrooms.
Cook for 2 minutes and add a little sauce to avoid from drying out.
Add green onions and the sauce.
Add cooked tofu .
Add slurry and eggs.
Keep combining.
Garnish with more green onions.
Serve with steamed rice.
