SARCIADONG ISDA
Note: I used red snapper in the video and although i only used 2 pcs of snapper (1 lb), the sauce recipe yields for 4 large pieces of fish.
Prep time; 10 minutes
Cooking time: 15 minutes
Yields: 4 servings with steamed rice
4 pcs red snapper (total weight 2 lbs)
1/2 cup all purpose flour
cooking oil for frying.
1 large onion, peeled and diced
3 large tomatoes, chopped
5 cloves garlic minced
ground pepper
fish sauce
2 cups water or broth
3 eggs beaten
1/2 cup chopped green onions
Fry fish until golden and set aside.
Saute onions and tomatoes for a minute.
Add garlic and cook for another minute.
Mash aromatics while cooking.
Add broth, ground pepper and fish sauce.
Cover and simmer for 5 minutes.
Add beaten eggs, stir.
Add fish.
Cover and cook for 2 minutes over low heat.
Uncover.
Add green onions before serving.
