How to make Chicken Bicol Express

- Cooking time: 15-20 minutes
- Yields: 4 to 6 servings with steamed rice
Ingredients
- 4 tbsp cooking oil
- 1 large yellow onion, peeled and diced
- 5 cloves garlic, minced
- 2 tbsp shrimp paste/bagoong
- 2 lbs boneless, skinless chicken breasts, diced medium
- 1 tsp annatto powder/achuete
- 1 can coconut milk
- 1 cup chicken broth
- 4 thai chiles
- 4 jalapeno peppers, sliced thinly
Using a large sauté pan, heat oil for a minute. Saute onions for 3 minutes until soft. Add garlic, keep stirring for 30 seconds. Add shrimp paste. Stir for 30 seconds until fragrant. Add chicken, continue to stir. Add annatto powder. Continue to stir for 5 minutes using medium heat. Add coconut milk Add chicken broth (not in the video) Keep stirring while simmering for another 3 minutes. Add chiles, adjust heat to low. Simmer for 5 minutes or longer depending on how spicy you want it. (the longer you simmer the chiles the spicier it gets.)
Serve with steamed rice.
