How to make Beef Pares
(Braised/Stewed Beef in HOISIN)
3 pounds beef chuck boneless
3 bay leaves
3 star anise
2 cups reserved beef broth
1/2 cup Hoisin Sauce
Slurry – 3 tbsp cornstarch dissolved in 1/2 cup beef broth
Boil beef for 2 hours or until it is tender. (you can add your bay leaves and star anise at this stage if you want) A
Cool down. Cut into big chunks.
Reserve broth.
In another small pot- bring 2 cups beef broth with star anise and bay leaves.
Add Hoisin sauce.
Cover and bring to a boil (5 minutes)
Uncover- add beef slices.
Add slurry and stir gently.
Adjust heat to medium.
Turn off heat after a minute.
Serve.
