PORK RIBS ADOBO SA GATA
Prep time: 10 minutes
Cooking time: 1 1/2 hours
Yields: 6 with steamed rice
3 lbs pork ribs, cut into big pieces
10 cups water
2 tbsp soy sauce
2 tbsp vinegar (palm vinegar)
1 tbsp ground pepper
10 cloves garlic, minced
5 dried bay leaves
1 can coconut milk
2 tbsp soy sauce (second batch)
4 tbsp vinegar (second batch)
Place ribs in a big pot with enough water to submerge the meat.
Add soy sauce, vinegar, ground pepper and bay leaves.
Cover and boil until meat is “fork” tender.
It took me 1 hour to tenderize the ribs I use.
water is significantly reduced as well – reduced to about 1 cup.
Add coconut milk and the second batch of soy and vinegar.
Continue boiling (this time uncovered) for another 20 to 30 minutes until coconut milk has reduced, sauce is thickened and oil appears from the coconut milk.
Taste and adjust.
The dish should be creamy, salty yet a bit sour.
Serve with steamed rice.
