TOSTADO MALASADONG GINILING FOR 6!
Prep time: 20 minutes
Cooking time: 30 minutes
Serves: 6 people with steamed rice
1 package (14 oz or 400 grams) extra firm tofu – drained
1 cup all purpose flour
2 tsp annato powder or Achuete powder
1 cube chicken seasoning
salt and pepper
1 large potato – peeled and diced small
2 medium size carrots – peeled and cut the same size as potatoes.
2 cups chicken stock or water
2 tbsp soy sauce
1/2 tsp sugar
2 tbsp cornstarch dissolved in 1/2 cup water
Mash tofu in a bowl.
Add flour, annato powder, chicken seasoning and salt and pepper.
Mash well.
Pre heat cooking oil.
Divide tofu into 2.
Fry the first portion until brown and ultra crispy (8 minutes)
Set aside.
Fry the second portion for 5 minutes – half cooked only.
Combine both and set aside.
Combine broth with soy, salt and pepper and sugar.
Add vegetables.
Cover and cook for 8 minutes until tender.
Add slurry (thickener)
Keep whisking.
Add fried tofu.
Turn off heat.
Combine well.
Add green onions for garnish.
Serve with steamed rice.
