4 lbs pork shoulder cut into bite size pieces
4 tbsp cooking oil
1 large onion
8 cloves garlic
2 knobs ginger
4 large tomatoes
dried bay leaves
6 tbsp or more fish sauce
4 tbsp or more soy sauce
3 cups pork blood – strained
1 cup vinegar
2 tbsp sugar
8 cups water or more (in case the sauce thickens – you may want to add more water)
2 tbsp knorr Chicken seasoning
Banana Peppers
Saute onions,garlic, ginger and tomatoes – 3 minutes
Add pork, fish sauce, soy sauce, vinegar, dried bay leaves – cook for 10 minutes.
Add sugar, chicken powder
Add water and continue to cook until pork is tender (10 minutes)
When pork is tender – slowly add blood.
Adjust heat to medium to low and keep stirring between 5 to 8 minutes until pork is cooked.
Add banana peppers.
Simmer for another minute.
Serve.
