Sticky Braised Pork Spare Ribs
What will you serve this dish with? Coleslaw or Steamed Rice?
Prep time: 15 minutes
Cooking time: 1 hour 10 minutes
Yields: 3 servings with a side dish
3 pounds pork spare ribs
4 tbsp cooking oil
1 medium size yellow onion, peeled and diced (1 cup)
1/2 cup ginger, peeled and slice
1/2 to 1 tbsp Chili garlic sauce
4 tbsp rice vinegar
4 tbsp sesame oil
3 dried star anise
10 cloves garlic
4 cups pork broth
1/2 cup soy sauce
1/2 cup oyster sauce
Juice of 1/2 lemon (1/4 cup lemon juice)
1 cup brown sugar
In a large dutch oven, preheat cooking oil for about a minute.
Sear ribs for 10 minutes turning all sides to brown.
Remove ribs and set aside.
Remove oil from the pot leaving about 2 tbsp.
Add oinon, ginger, garlic and all the remaining ingredients except brown sugar.
add ribs back.
Bring to boil.
Adjust heat to medium and continue to cook for 55 minutes.
Check it once in a while making sure the liquid has not dried out completely.
5 minutes into turning off the stove, add 1 cup brown sugar.
Crank up heat to high, continue to cook uncovered until sauce thickens and tibs becomes sticky.
Turn off heat. Cool down alloing ribs to get sticky.
