Smothered Style Chicken Sarciado

Cooking time: 40 minutes
Yields.6 large chicken thighs
1/2 cup all purpose flour seasoned with salt and pepper
1 1/2 to 2 pounds bone-in, skin on chicken thighs (6 pcs)
1 cup cooking oil
1 large yellow onion, peeled and chopped (2 cups)
6 large tomatoes (4 cups) quartered.
10 cloves garlic
3 bay leaves
2 cups chicken broth
2 cans green peas (please see the brand I used)
Coat chicken with seasoned flour
Remove excess flour (shake off)
Heat oil to 350 F
Fry chicken 5 minutes each side.
Remove from the Dutch oven.
Remove oil as well leaving 2 tbsp of oil only.
Add onions and tomatoes and cook for 2 minutes.
Add bay leaves.
Season with fish sauce and ground pepper.
Add back chicken.
Bring to a boil.
Cover, adjust heat to medium and cook for 25 minutes.
Turn off heat.
Serve with steamed rice.
