SALMON ESCABECHE WITH TAUSI
Prep time: 30 minutes
Cooking time:
Serves: 6 fish fillets
6 salmon fillets at (8 oz each)
1 cup cornstarch
salt and pepper
1/2 cup cooking oil
1 large onion,peeled and chopped
1/2 cup finely chopped peeled ginger
6 oz/1 cup thinly sliced carrots (1 1/2 stick length)
5 cloves garlic, minced
1/2 can tausi or fermented soy bean – brine removed not washed.
1 tbsp sugar
1 cup water
1/2 cup tomato ketchup
1/2 cup finely chopped green onions
Combine salmon with seasoned cornstarch in a mixing bowl
Pre heat oil and fry salmon between 5 to 6 minutes until golden brown.
Set aside.
Clean wok and use 4 tbsp of oil in sauteeing onions and ginger.
Add carrots – stir and cook for 3 minutes until fragrant.
Add garlic and cook for 30 seconds.
Add tausi and cook for a minute.
Reduce heat to medium and add the thickener
Thickener is ( 1 cup of water combined with the leftover cornstarch (about 2 tbsp) with tomato ketchup.
Bring to simmer and add cooked salmon.
Add green onions and combine gently.
Serve.
