PORK AND TOFU WITH BROCCOLI – SIMPLENG ULAM

Cooking time: 10 minutes
Yields: Serves 4 with steamed rice
Note: I adjusted the portions to serve 6 people with steamed rice
1 pound lean pork, diced
1 package extra firm tofu, drained and diced
1 pound broccoli, cut into small pieces
½ cup cornstarch
salt and pepper
1 large (1 ½ cups) yellow onion, peeled and cut into half rings
2 knobs ginger, peeled and sliced thinly
5 cloves garlic, minced
¼ cup canola oil
½ cup water
1/4 cup oyster sauce
1/4 cup soy sauce (i used low sodium soy sauce)
2 tbsp sugar
3 tbsp sesame oil
Coat both pork and tofu with cornstarch.
Pre heat oil for 2 to 3 minutes until hot.
Fry tofu and pork until golden brown.
Set aside.
In another clean pan, coat with cooking spray and pan grill broccoli for a minute until blistered.
Set aside.
In another pan, pre – heat 4 tbsp oil.
Saute onions for 3 minutes before adding the ginger.
Cook for a minute then add garlic and cook for 30 seconds.
Combine water with sesame oil, oyster sauce, soy sauce and sugar.
Season with ground pepper.
Add 1 tbsp of cornstarch into the liquid and dissolve well.
Add to the pan and bring to a boil.
Add back pork,tofu and broccoli.
Combine lightly.
Turn off heat.
Serve with steamed rice.
