Pre heat 3 tbsp cooking oil for a minute.
Add 1 lb of diced lean pork. Brown. (Cook for 5 minutes.)

Add 2 to 3 large tomatoes (chopped) and 1 large onion (peeled and chopped) to the pot.
Add 1/4 cup shrimp paste.
Cover and cook for 6 minutes USING MEDIUM HEAT and covered.
This allows the vegetables to release the juice. If you cook over high heat it will dry out.
Uncover and add the following vegetables,
Ampalaya or bittermelon
Squash or kalabasa
Eggplant
Chinese long beans
Season with ground pepper and sugar.
OPTIONAL – YOU CAN ALWAYS ADD WATER OR STOCK IF YOU WANT TO,
Cover and cook over low heat for 10 minutes.
Turn of heat and allow the carryover cooking cook the vegetables for another 2 minutes before serving.
