MAPO TOFU
Prep time: 10 minutes
Cooking time: 15 minutes
Yields: serves 6 as appetizer/starter course
1 lb ground pork
1 package silken tofu, drained from water and cut into small cubes
2 tbsp ginger
5 cloves garlic, minced
3 tbsp sesame oil
1 tbsp annato powder for color
1 tbsp sugar
3 tbsp Chinese fermented black beans (without the brine)
2 tbsp soy sauce
1 tsp ground pepper
2 cups pork broth
1/2 cup green onions, chopped
Coat a pan with cooking spray and cook pork for 10 minutes until brown.
Add ginger and garlic and cook for 15 seconds.
then combine pork and aromatics and cook for 1 minute.
Add sesame oil and annato powder and stir.
Season with ground pepper
Add fermented black beans, soy sauce and sugar.
Stir and add broth.
Bring to a boil.
Adjust heat back to high
Cook for 3 minutes.
Add tofu and stir gently.
Add green onions, stir gently.
Turn heat to low.
Simmer for 1 minute before turning heat off.
Serve hot.
