Kare Kareng Pata sa Restaurant
6 lbs pata, cleaned and boiled until tender. Broth reserved.
Sauce:
1 cup rice flour, toasted
1 tbsp annato powder
1 1/2 cups chunky Peanut Butter
2 cups reserved broth
Blanching Vegetables
Boiling water with salt
Green beans – 1 minute
Bokchoy 1 minute
Eggplant – 2 minutes
Ice water then drain
How to cook Kare Kare
4 tbsp cooking oil
Onion and garlic
6 tbspcFish sauce
1 tbsp sugar
1 tbsp ground pepper
8 cups reserved broth
1 chicken cube
