Yields: Serves 8
2 cups glutinous rice flour
1 cup rice flour
1 cup sugar
a pinch of salt
3 cans coconut milk
1 can evaporated milk
2 oz ube powder
ube food flavoring
3 tbsp condensed milk
Combine and sift – flour, salt and sugar.
Remove 1/2 cup coconut milk from 3 cans of coconut milk – set aside.
Combine dry ingredients with coconut milk and evap.
Divide batter into two.
Cook the first batter using a wok.
Use low to medium heat.
Keep stirring for 3 minutes then add ube powder and ube flavoring.
Keep stirring for about 5 to 6 minutes until shiny and glossy.
Pour in a baking glass coated with cooking spray.
Set aside.
Cook the other half using the same method.
When done pour on top of the ube – set aside.
Make the topping by combining the set aside coconut milk and add 3 tbsp condensed milk.
Pour on top.
Broil until top is brown and bubbly. (it took me 4 minutes to brown my inutak)
Serve room temperature.
