GINISANG MUNGGO WITH ALAMANG

Serving: 12 to 15 people
Ingredients:
1/2 (500 grams) kilo munggo/mung beans
4 tbsp cooking oil
1/2 kilo pork liempo
6 tablespoons bagoong alamang
5 tablespoons tinapa flakes
2 medium size ampalaya cut in thin slices
1 bunch ampalaya leaves
2 onions, chopped
4 cloves garlic, minced
3 medium size tomatoes, chopped
Bring a big pot with enough water and add mungbeans.
Boil for 30 minutes until soft.
Meanwhile, boil pork with 12 cups of water. Season water with salt.
Cover and cook pork until tender. Cut into small pieces.
Save the pork stock and set aside.
Meanwhile,
Pre heat 3 tbsp of cooking oil and cook garlic, onions and tomatoes.
Add the alamang and cook for about 5 minutes.
Then add tinapa flakes and cook for 3 minutes.
Add fried pork and simmer for about 3 minutes.
Put the sauteed ingredients in the boiling mung beans.
Add reserved pork stock, cover and cook for 2 minutes.
Uncover
Add ampalaya and ampalaya leaves and cook for 1 minute over low heat.
Cover and turn off heat.
Serve with steamed rice.
