TOSTADONG TUYO AT HIBE SA GINATAANG GULAY
Prep time: 20 minutes
Cooking time: 15 minutes
Serves: 4 with steamed rice
1/2 lb fried tuyo
1 cup dried shrimp (hibe)
5 cloves garlic, minced
1 large onion, peeled and diced
3 tomatoes, chopped
1 can coconut milk
3 cups Chinese long beans, cut into 2 inch length
4 banana peppers, seeds remove and cut into slices
8 pcs okra, cut in half
1 long ampalaya (bittermelon), seeded and sliced into 1/2 thickness
Pre heat oil in a wok
Saute onions and tomatoes for 3 minutes
Add coconut milk and bring to a boil 2 minutes
Add vegetables and cover.
Cook for 5 minutes over medium heat.
Add fish sauce and ground pepper.
Cover and turned off heat.
Add toasted fish and dried shrimp before serving.
Clean wok and cover cooking spray
Add garlic and cook for 30 second.
Add fried tuyo and toast it for a minute
Add hibe and continue to stir and toast for another minute.
Turn off heat and you are done toasting it.
Serve on top of the ginataang gulay.
