CHICKEN KALDERETA
Prep time:20 minutes
Cooking time: 25 minutes
Serves: 4 with steamed rice
4 tbsp cooking oil
2 lbs chicken thighs
1 large onion
5 cloves garlic
1/2 tsp pepper flakes or ground pepper
5 pcs dried bay leaves
2 tbsp fish sauce
1/4 cup soy sauce
1 small can tomato sauce
1 cup chicken broth
2 tbsp liver spread
4 pcs large Filipino hotdogs,cut into small pieces
2 large zucchini, cut into large pieces
1 red or yellow bell pepper, seeds removed and sliced thinly.
Pre heat oil in a large dutch oven
And cook chicken for 5 minutes
Add pepper flakes.
Add onions, garlic and bay leaves
Add fish sauce
Add soy sauce
Add tomato sauce
Add broth
Add liver spread
Bring to boil and cover and adjust heat to medium
Add ground pepper.
Cover.
Cook for 10 minutes and add hot dogs and bell pepper.
Add Zucchini.
Cover and use low heat and cook for 5 minutes.
Turn off heat and allow the carry over cooking to cook hotdogs and zucchini completely.
Serve with steamed rice.
