CHICKEN AND BAGUIO BEANS WITH TAUSI
Prep time: 20 minutes
Cooking time: 15 minutes
Serves: 4 people
1 lb Boneless, skinless, Chicken Breasts – cut into large pieces
4 tbsp olive oil
1 large onion, peeled and chopped
1 large tomato, chopped
5 cloves garlic, minced
1 tbsp chili garlic paste
1 can tausi – fermented black beans, drained
3 tsp black beans brine
1 to 1 1/2 cups water or chicken stock
3 to 4 tbsp mayonnaise
1 lb green beans
1 cup chopped green onions
Coat a non stick pan with cooking spray and pan grill chicken.
Grill for 7 minutes or until brown and set aside.
Pre heat cooking oil and saute onions and tomatoes for 5 minutes until mushy.
Add garlic and cook for 30 seconds.
Add chili garlic paste.
Add black beans, brine and water.
Bring to boil.
Add green beans and mayonnaise.
Combine well.
Adjust heat to medium and cover.
Cook for 3 minutes.
Uncover and add back cooked chicken.
Combine well.
Serve.
