CALAMARI WITH AMPALAYA IN OYSTER SAUCE
Prep time: 30 minutes
Cooking time: 10 minutes
Serves: 6 to 8 people
Batter:
1 1/2 cups all purpose flour
1 egg ca
1/2 cup water
1/3 cup cornstarch
salt and pepper
3 lbs calamari rings and tentacles
Cooking oil
1 large zucchin, cut into rings then halved
1/2 cup chopped cilantro
1/2 cup green onions
4 serrano peppers, sliced thinly, seeds and all
1 large zucchini, sliced into rings then halved
1 large bittermelon, seeded and cut into rings then halved
1/2 cup oyster sauce
Combine batter and calamari and chill in the refrigerator for 30 minutes.
Then deep fry until golden brown and crispy – 6 minutes
Set aside.
Meanwhile pre heat 6 tbsp cooking oil then add zucchini and cook for 1 minute.
Add cilantro,green onions and serrano peppers.
then add bittermelon.
Cook for a minute.
Add oyster sauce and combine well.
Add fried calamari and combine well.
Add Thai chiles, (labuyo)
Season with salt and ground pepper.
Serve.
