AMPALAYA CON CARNE/BITTERMELON WITH BEEF

Cooking time: 8 minutes
Yields: serves 4 with steamed rice
4 tbsp cooking oil
1 large onion, peeled and diced
5 cloves garlic, minced
1 tbsp soy sauce
1/2 tsp sugar
a pinch of ground pepper
3/4 cup water or broth
1 lb COOKED GROUND BEEF
2 large ampalaya/bittermelon – seeded, cut in half lengthwise, sliced thinly
2 eggs, beaten
Pre heat oil for a minute.
Add onions and cook for 2 minute.
Add garlic and cook for 30 seconds.
Add ground pepper
Add soy sauce
Bring to simmer about a minute.
Add COOKED GROUND BEEF.
Add beaten eggs.
Cover. Adjust heat to low and cook for 5 minutes until vegetables are pan- steamed and eggs coagulate.
