Adobong Sitaw
(Sauteed Chinese Long Beans in vinegar and soy)
Prep time: 10 minutes
Cooking time: 15 minutes
Yields: 4 servings with steamed rice
4 tbsp olive oil
1 lb pork with fat (cut into small pieces)
1 medium size yellow onion, peeled and diced (1 1/2 cups)
5 cloves garlic, minced
1/4 cup vinegar
3 tbsp soy sauce (you can add another 2 tbsp if you want it saltier)
1/2 cup water (if it dries out before the vegetables are cooked)
5 cups sitaw or Chinese long beans (cut into 3 inch long)
Fry pork until brown.
Add and saute onions for 3 minutes until soft.
Add garlic and cook for 30 seconds.
Add vinegar and soy and water. Stir and cook for 30 seconds.
Add beans, stir and cover.
Reduce heat to medium and cook for another 7 minutes or longer if you want your veggies to be completely soft.
You may also want to stir occasionally and feel free to add water in case it dries out.
Serve with steamed rice.
