ULTRA CRISPY SALMON FRIED RICE
Prep time: 30 minutes
Cooking time: 20 minutes
Serves: 8 servings
1 pc (8 oz) salmon fillet
salt and pepper
4 tbsp cooking oil
1 medium size onion, peeled and chopped
10 cloves garlic, minced
3 cups cold steamed rice
1 /12 cups chopped celery
1 medium size carrot, peeled and diced
4 eggs, beaten
2 to 4 tbsp soy sauce
1 cup chopped green onions
Season fish.
Coat pan with cooking spray and turn on heat.
Fry fish for 8 minutes (cooking each side for 2 minutes) until fully cooked.
Mash with fork.
Cut skin with scissors into strips if using.
Set aside.
Pre cook oil then saute onions for 2 minutes.
Add garlic and cook for 30 seconds.
Add rice and fry for 3 minutes until crispy.
Add eggs and keep stirring to coagulate.
Add salmon flakes.
Keep cooking and stirring.
Season with salt and pepper.
Add soy sauce.
Add green onions.
Add to the fried rice.
Keep stirring.
Taste and adjust with soy if needed.
Serve hot.
