TRI COLORED SAPIN SAPIN (STICKY SWEET RICE CAKES)

Latik Making:
1 can coconut milk – keep stirring using medium heat for 25 minutes until oil comes out and coconut becomes solid and golden brown.
SAPIN SAPIN
A
2 cups glutinous rice flour
1 1/2 cup sugar
1 can coconut milk
1 tbsp vanilla
a pinch of salt
Food color
Yellow
Purple
Combine all ingredients until smooth. (A)
Divide into 3
Add food color – yellow,purple and white.
Keep stirring.
Coat the container with cooking spray to prevent from sticking.
Pour the white batter first and steam for 10 to 12 minutes.
Then when it is cooked – pour the next color – purple.
Do the same.
then add the yellow batter when purple is cooked.
Cool down and turn it over to unmold.
Sprinkle latik on top.
Slice and serve.
