SWEET AND SOUR PINEAPPLE PORK CHOP

Cooking time: 20 minutes
Yields: 6 servings with steamed rice
1 ½ to 2 lbs thinly sliced pork chop
6 cloves garlic, minced
3 tbsp sugar
1 tsp annatto powder
1 ½ tbsp soy sauce or more
1 tsp ground pepper
1 tbsp cornstarch
¾ cup pineapple juice – reserved juice from a canned pineapple chunks
¼ cup cooking oil
1 medium size onion, peeled and diced.
2 cups pineapple chunks
½ cup ketchup
4 tbsp soy sauce
2 cups chopped scallions
Combine all ingredients (use 3 cloves of garlic only) from pork chop to juice in a sealable plastic bag. Keep it the refrigerator for 4 hours or longer to marinate.
When ready – dap paper towels into each pork pieces to remove some of the liquid. This will prevent the oil from splattering when you fry it.
Pre heat oil for a minute using a large pan.
Fry pork chops in batches for 5 minutes turning once or until each side is cooked and brown.
Set aside.
Meanwhile sauté onions for a minute using the same pan.
Add garlic and cook for 30 seconds. Use medium heat.
Add pineapple chunks, ketchup, soy sauce and season with ground pepper.
Stir and cook for 3 minutes using medium heat.
Season with salt.
Add scallions and pork chops.
Turn off heat.
Make sure pork chops are glazed with the sauce before serving.
