SITCHARO AT TILAPIA
PREP TIME: 30 minutes
Cooking time: 20 minutes
Serves: 8 people with steamed rice
1 lb tilapia fillets, cut into large pices
Batter:
1 egg
1/2 cup all purpose flour
3 tbsp cornstarch
salt and pepper
1/2 cup water
2 cups cooking oil
1 large onion, peeled and chopped
5 cloves garlic,
1 medium size carrot
8 oz white button mushrooms
1 medium size zucchini
1 lb sugar or snow peas
1/2 cup soy sauce
3 to 4 tbsp sesame oil
1/2 tsp sugar
3 tbsp patis (not in the video)
1/2 lb medium size shrimp, peeled and deveined
ground pepper
1 cup water
slurry – 1 tbsp cornstarch dissolved in 1/2 cup water
Combine batter until smooth.
Dip fish and fry until golden brown.
Set aside.
Using another skillet – pre heat 6 tbsp cooking oil.
Saute onions and garlic.
Add carrots and cook for 45 seconds.
Add mushrooms and cook for 30 seconds.
Add ground pepper
Add patis
Add zucchini, stir and add sugar peas.
Combine well.
Add soy sauce
Add sesame oil
Combine well
Add sugar.
Create well at the middle and add shrimp.
Cook for 30 seconds as you stir it using high heat.
Add water for more sabaw.
Cover and cook for 3 minutes.
Uncover – taste and adjust.
Slowly whisk in slurry.
Keep stirring until sauce is thick.
Turn off heat.
Add back fried fish.
Serve right away.
