SWEET AND SOUR SARDINAS FISH FILLETS

Cooking time: 15 minutes
Serves: 6 people with steamed rice.
1 can red Ligo sardines
1 cup all purpose flour
14 oz extra firm tofu – liquid removed
salt and pepper
1 tsp sugar
1 tbsp knorr liquid seasoning or 1 tbsp chicken powder.
enough cooking oil for frying
1 cup water or chicken stock
1/4 cup less sodium soy sauce plus 2 tbsp
1/4 cup ketchup (it is different if using Banana Tamis Anghang Ketchup)
1 tbsp sugar
2 tbsp vinegar
1 tbsp cornstarch dissolved in 1/4 cup water
Mash tofu and combine with sardines, flour,salt and pepper, sugar, knorr.
Pre heat oil.
Use a large table spoon to portion the mixture.
This yields 20 pcs using 1 large spoon.
Fry in batches until golden brown – total 4 to 6 minutes.
Regulate the oil temperature.
Remove from pan and set aside.
Make the sauce.
Combine water, soy,ketchup,sugar, vinegar.
Season with salt and pepper.
Bring to a boil.
Slowly add slurry (cornstarch and water)
Keep stirring until thick
Pour over sauce to the fillets when ready to eat.
Enjoy.
