Salt and Pepper Shrimp with a hint of Curry. Enjoy ?
Prep time: 15 minutes
Cooking time: 3 minutes (2 batches)
Yields: 2 servings
1 pound large shrimp
3 tbsp cornstarch
1/2 tsp salt
1/2 tsp ground pepper
1 tbsp yellow curry powder
cooking oil
1 cup finely chopped scallions
1 Thai chili – or red bell pepper, seeded and finely chopped
1 clove garlic, minced
more salt and pepper to taste.
After removing shrimp legs and gutted – combine cornstarch, salt and pepper and curry powder in a bowl and toss shrimp making sure it is well coated.
Pre-heat cooking oil for 3 minutes or 350 F.
Slowly deep fry shrimp for a minute moving shrimp around and making sure it is cooking evenly.
Remove shrimp and place in a colander to remove excess oil.
Combine shrimp with a little more salt and ground pepper.
Add scallions and bell pepper.
Add garlic.
Serve right away.
