PORK CHOP BBQ AND JAVA RICE
Prep time: 20 minutes
Inactive time: 4 hours or longer (marinating time)
Grilling time: 8 minutes
BBQ
4 tbsp brown sugar
4 tbsp banana ketchup
4 tbsp soy sauce
1 tbsp vinegar
5 cloves garlic
1/2 tsp salt
1 tsp ground pepper
(if you prefer a deeper red pork bbq – add 1 tsp anatto powder or achuete)
2 pcs (1 lb) thin pork chop)
Basting:
Add 2 tbsp cooking oil
4 tbsp banana ketchup
1 tsp anatto powder or achuete powder (if deeper red color of bbq is preferred)
Add all the above ingredients to the leftover marinade.
JAVA RICE
3 tbsp cooking oil
5 cloves garlic
1/2 tsp tumeric powder
4 tbsp banana ketchup or more if you want it sweeter
I steamed 2 cups of rice and when it is cooked, I added it to the pan.
Combine all the bbq ingredients and marinade for 4 hours to overnight to develop flavor.
Grill pork chop for 8 to 10 minutes until cooked.
Baste or brush it with basting liquid.
Meanwhile for the rice – pre heat oil.
cook garlic for 30 seconds.
add tumeric powder, ketchup and season with salt and pepper.
Add cooked rice and continue to cook making sure it is well combined.
Cook for 2 minutes.
Taste and adjust with salt and pepper if needed.
Serve together.
