How to make Pork Asado
(Braised Pork in soy and lemon with potatoes and bell pepper)
Prep time: 15 minutes
Cooking time: 30 minutes
Yields: 4 servings with steamed rice
2 pounds pork belly, cut into large pieces
1/4 cup soy sauce
2 cups water or pork broth
1 large onion
Juice of 1 1/2 lemon or 3/4 cups lemon juice
2 large potatoes, peeled and cut into large chunks
1 large red bell pepper, seeded and diced medium
Coat dutch oven with cooking spray.
Add seasoned pork, turn on heat, cover and cook for 10 minutes using medium heat
until caramelized.
Turn pork over and cook for 3 more minutes to cook the raw sides. (covered)
Remove pork from the pan and remove pork fat.
Add onions to the pan and cook for 2 minutes.
Add soy, broth, lemon juice and pork
Cover and cook for 10 minutes.
Add potatoes and cook for 10 minutes.
Add bell pepper, turn off stove and cover.
Allow steam to cook the bell pepper.
Serve.
