PINANGAT NA ISDA/PAMPANO (SIMMERED FISH IN LEMON AND TOMATO BROTH)
Prep time: 10 minutes
Cooking time: 8 minutes
Yields: serves 4 with steamed rice
3 tbsp cooking oil
2 knobs ginger, peeled and sliced thinly
2 large tomatoes, chopped
3/4 cup water or broth
1/2 tsp ground pepper
2 tbsp fish sauce or patis
banana peppers if using (I used 2 tbsp hot sauce)
Juice of 1 lemon
2 lbs pampano (cleaned and gutted)
Pre heat oil for a minute.
Add ginger and tomatoes and cook for 3 minutes.
Add broth, fish sauce, ground pepper and hot sauce.
Add lemon juice.
Bring to a boil.
Add fish and reduce heat to low. Cover.
Cook between 2 to 3 minutes (maybe less since the fish are small and very thin)
Turn off heat.
Serve with steamed rice.
