MINATAMIS NA SAGING,KAMOTE AT MANGGA
Note: I adjusted the recipe to serve 6 portions
Prep time: 30 minutes
6 tbsp cooking oil
6 tbsp butter
2 large kamote (sweet potatoes), peeled and cut into large dice (1 lb)
8 medium size saba – peeled and cut into large dice (1 lb)
2 cups of dark brown sugar
1 cup water
2 tbsp Vanilla extract
3 large ripe mangoes, pitted and cut into large dice
Pre heat oil in a pan
Fry kamote until lightly brown and crispy in the crust.
Melt butter in a pan.
Add sugar and water – whisk to dissolve
Bring to boil.
Add bananas and adjust heat to low.
Add back kamote to the pan.
Add vanilla extract.
Cover and cook for 2 minutes.
Add mango, cover and turn off heat.
Allow steam to gently cook mango (do not overcook)
Serve with vanilla ice cream.
