MANGGA, SUMAN,UBE AT LATIK

MANGGA, SUMAN,UBE AT LATIK

Prep time: 20 minutes
Cooking time: 20 minutes
Serves: 6

2 cups glutinous rice
5 cups water
1 cup glutinous rice flour
1 tbsp lye water
Pandan leaves
1 cup white sugar
1/2 can evaporated milk
1/2 can condensed milk
3 tbsp ube powder
a few drops ube food color
1/2 cup water
1 tbsp cornstarch
fresh ripe mangoes, pitted, peeled and diced
1 can coconut milk for latik making

wash rice once.
Add water, lye and pandan leaves
Cook over medium heat for 12 minutes stirring occasionally.
Remove pandan after.
Add glutinous flour keep stirring for 3 minutes until it all comes together as one whole.
Set aside.
UBE
Combine evap, condensed,ube powder and ube food flavoring in a sauce pan.
Cook over medium heat for 3 minutes.
Stir in slurry ( 1 tbsp cornstarch and 1/2 cup water)
Keep stirring until thickens.
Cool down.

Assemble in a bowl.
Sprinkle with latik
Add fresh mangoes
Add more evap milk.
Serve cold!
