KILAWING LABANOS WITH PORK (PICKLED DAIKON WITH PORK)
This dish serves 2 with steamed rice
3/4 lb daikon, peeled and cut into1/4 inch rounds then cut in half diameter
1/2 lb pork shoulder cut into 1/2 inch thickness and 2 inches in length
1/2 cup cane vinegar/suka
salt and pepper
3 tbsp cooking oil
1 medium size onion, peeled and diced
5 cloves garlic, minced
1 1/2 cups water
3 pcs dried bay leaves
Fish sauce
Wash daikon with cold water and drain after peeling.
Wash pork with cold water and drain.
Season vinegar with salt and pepper
and divide into two.
Pour each portion to daikon and pork and marinate for 30 minutes.
Discard vinegar from daikon.
Saute onion with oil for 1 minute.
Add garlic and cook for 30 seconds.
Add pork, stir and cook until brown. It took me 5 minutes to brown the pork
Add the vinegar from pork marinade.
Add water, cover and cook until pork is tender. It took me 7 minutes until pork is tender. It can take longer depending on the cut of pork you are using.
Add
Saute daikon without the vinegar marinade.
Add bay leaves
Season with fish sauce if using.
Cover and cook for 5 to 7 minutes until soft. you may add more water if it’s drying out.
Serve with steamed rice.
