This week I’m cooking –
GINATAANG BIYA SA DILAW (SIMMERED GOBY FISH IN COCONUT AND TURMERIC)
Prep time: 10 min
Cooking time: 25 min
Serving: 2 servings with steamed rice
Ingredients:
7 pieces biya – goby fish
2 cups coconut cream (kakanggata)
2 cups water
1 big onion, peeled and chopped
2 thumbs luya dilaw sliced – turmeric ginger, peeled and sliced thinly
2 pcs red chili cut in half (thai Chiles)
2 tbsp salt
3 tbsp palm vinegar
Clean the biya and sprinkle with salt.
In a pan, place the biya, vinegar, luya dilaw, onion and salt.
Cover.
Simmer for 2 minutes over low to medium heat.
Uncover.
Add water, simmer for 2 minutes.
Cover. Uncover.
Add the coconut cream.
Cover. Simmer for 5 minutes.
Uncover.
Put the thai chiles
Cover. Simmer for 8 minutes.
