DALAWANG BICOL EXPRESS

  1. BICOL EXPRESS

Prep time: 20 minutes
Cooking time: 45 minuutes (including cooking the pork belly)
Serves: 4 to 6 with steamed rice

1 1/2 lbs pork belly
4 tbsp cooking oil
1 medium size yellow onion, peeled and chopped
5 cloves garlic, minced
at least 2 tbsp shrimp paste or bagoong
1 can coconut milk
Chili sweet peppers/labuyo/bananapeppers – depending on how spicy you want your dish

Boil pork belly in a medium pot until tender.
Drain and cut into small cubes and set aside.
Meanwhile – pre heat oil for a minute then saute onions for 3 minutes.
Add garlic and cook for 30 seconds.
Add shrimp paste and cook for a minute before adding the pre boiled pork.
Add coconut milk.
Bring to a boil and allow to cook for 3 minutes.
Reduce heat to medium and add peppers.
allow to simmer for 2 minutes until sauce has thickened.
Serve with steamed rice.

2.BICOL EXPRESS WITH SIGARILYAS
(SPICY SMOTHERED PORK IN COCONUT CREAM)

Prep time: 25 minutes
Cook time: 45 minutes
Serving: 10 people

Ingredients:
3 tbsp cooking oil
5 cloves garlic, minced
2 medium size onion, peeled and chopped
2 kilos pork liempo cubed (pork belly)
4 tbsp shrimp paste
500 grams coconut cream
8 pcs red chili chopped
10 pcs green chili sliced
8 pcs winged bean sliced (sigarilyas)

Heat the oil in a pan and saute garlic and onion for 2 minutes.
Add the pork and shrimp paste.
Stir.
Cover.
Cook between 15 to 20 minutes.
Uncover.
Add coconut cream and Thai chili pepper.
Cover.
Cook for 20 minutes stirring occasionally until the liquid is reduced and become oily.
Uncover.
Add the the finger chili and the wing beans.
Cover.
Simmer for another 2 minutes.
Serve with steamed rice.
