CRISPY FISH FILLET IN ORANGE SAUCE
Prep time: 30 minutes
Cooking time: 20 minutes
Serves: 4 with steamed rice
Fish
1 lb cod fillet, cut into 2 bite size pieces
5 cloves garlic, minced
1 tbsp orange zest
1/2 tsp salt
1/2 tsp ground pepper
Combine all ingredients and set aside.
BATTER
1/2 cup rice flour
1/4 cup all purpose flour
1 tsp salt
1 tsp ground pepper
2 tbsp cornstarch
1/4 cup water
Combine all ingredients until smooth – set aside
ORANGE SAUCE
2 tbsp sugar
3 tbsp soy sauce
1 tbsp chili garlic paste
Juice of 2 large oranges
Whisk all ingredients – set aside
Combine fish and batter
Pre heat cooking oil -making sure it is 350F.
Fry fish until golden brown – (5 to 7 minutes)
Place in a colander to remove excess oil.
Cook in batches.
Place orange sauce in a pan and pre heat.
after 2 minutes –
Add fish
add thickener (1/2 cup water with 1 tbsp cornstarch)
Lower heat to medium and glaze fish with sauce.
After 1 minute turn off heat.
Serve.
