CHICKEN WITH MUSHROOMS AND ZUCCHINI
Prep time: 10 minutes
Cooking time 10 to 12 minutes
Yields: serves 6 with steamed rice
1½ lbs chicken tenderloins cut into small pieces
5 tbsp cornstarch
½ tsp salt
½ tsp ground pepper
1 cup chicken broth
1 large onion, peeled and diced
2 knobs ginger, peeled and cut into small thin strips
5 cloves garlic, minced
8 oz white button mushrooms or any mushrooms you prefer – sliced
8 oz zucchini, ends cut and cut into small pieces
3 tbsp – Sesame oil
Pre heat enough cooking oil to fry chicken for about 6 minutes. Set aside.
Clean pan and add about 4 tbsp oil.
Saute onion. garlic and ginger for 1 minute.
Add vegetables and cook for a minute over high heat.
Add back cooked chicken, stir and cook for a minute over high heat.
Add sesame oil and stir.
Meanwhile, combine left over cornstarch with soy sauce, broth.
Add to the pan and stir.
Cook over medium heat for 2 minutes until sauce is thick.
Serve with steamed rice.
Enjoy.
