BAKED COD IN TOMATO AND LEMON BROTH AND FETA CHEESE
Prep time: 10 minutes
Cooking time: 20 minutes
Yields: serves 2 (if using 2 pcs of fillets)
3 tbsp olive oil
8 oz tomatoes, mashed
3 cloves garlic
1/2 tsp Italian seasoning if using.
salt and pepper
1/4 cup white wine
3 tbsp lemon juice
2 pcs ALASKAN COD FILLETS @ 8 oz each
3 tbsp crumbled feta cheese
Pre heat oil.
Add and cook tomatoes and garlic for 2 minutes until soft and produced tomato liquid.
Season with salt, pepper and italian seasoning.
Add wine and cook for a minute to boil off alcohol.
Add lemon juice juice.
Taste and adjust if needed.
Pour sauce in a small baking dish.
Leave a small sauce in the pan.
Place fish on top of the sauce and pour remaining sauce top of each fillet.
Baked at 450 F for 10 minutes or until sauce bubbles and top is brown.
Serve with crumbled feta cheese.
Serve hot.
