ADOBONG MANOK AT KANGKONG

ADOBONG MANOK AT KANGKONG

Prep time: 30 minutes
Cooking time:
Serves: 8 to 10 with steamed rice

Marinade:
1/2 cup Palm Vinegar
1/4 cup Soy sauce
1 to 2 tbsp oyster sauce
8 cloves garlic, minced
1/2 tsp ground pepper
1/2 tsp anatto powder/achuete
10 pcs small dried bay leaves
4 lbs chicken thighs,skin on and bone in

for frying
1/4 cup cooking oil
1/4 cup chicken broth
2 bunches of kangkong

Pour marinade into the chicken
marinate over night.
Dry chicken with paper towels with liquid
Pre heat oil and fry chicken for 5 minutes until half cooked
Remove chicken from the pan and clean.
Add left over marinade into the pan and add chicken back.
Add broth and cook using medium heat.
Cook for 5 minutes.
Remove chicken
Add kangkong and cover
Cook for 2 minutes on low heat.

Drizzle sauce on top of the chicken and serve with kangkong on the side.
Serve with steamed rice.
