UBE BANANA CREAM PANCAKES
Prep time: 20 minutes
Cooking time: 2 minutes per pancake
Serves: 4 to 5 cakes
A.
1 cup all purpose flour
1 tbsp sugar
1 tbsp baking powder
a pinch of salt
B
1 cup fresh milk
a few drops of ube flavor
2 tbsp cooking oil
1 egg
BANANA CREAM
1 Ripe banana – peeled and chopped
2 tbsp butter
2 tbsp white sugar
1 tbsp cornstarch
3/4 cup evaporated milk
Sift and combine A in a bowl.
Combine all B
Slowly add A to B in a bowl.
Divide into 4.
Pre heat pan with cooking spray.
Use low to medium heat.
Ladle batter into the pan.
flip after 1 1/2 minutes or until bubble appears on the surface of the cake.
Meanwhile -make the banana cream
Melt butter in a pan
Add sugar and bananas and cook for 3 minutes using low heat until caramelized.
Add slurry (cornstarch and milk) dissolved
Low heat and stir – until thick.
To serve – smother pancakes with banana cream on top.
Sprinkle with powdered sugar on top.
Serve.
